Job Summary:
The Tournant at the Keystone Stables Back Ranch is a key leadership position within the kitchen, responsible for overseeing and running multiple stations in a fast-paced culinary environment. As a lead on the line, the Tournant sets the tone for efficiency, consistency, and teamwork, ensuring that all food is prepared according to standardized recipes and portion controls. This role is both hands-on and supervisory, playing an important part in guiding and supporting other team members while maintaining high standards of service. The Tournant assists with receiving food and dry goods deliveries, accurately accounting for inventory, and is comfortable using Coupa and other food ordering programs to support kitchen operations. They are also responsible for upholding cleanliness and organization across coolers,storage areas, prep tables, and dining spaces, as well as properly storing, covering, and rotating all food items to ensure freshness and safety. In collaboration with the Chef(s) and wranglers (staff), the Tournant helps maintain par levels, manage product flow, and ensure smooth day-to-day operations.Above all, this position requires a confident and adaptable leader who can step into any role in the back ranch kitchen whether serving or cooking lead by example, and support the team in delivering an exceptional guest experience.

Job Responsibilities:
- Works all stations as needed to support kitchen operations.
- Develops and trains line staff, including wrangler (servers), bartenders to meet standard performance levels.
- Communicates with wranglers, managers, and supervisors on duty to ensure proper service during assigned shifts.
- Assists in maintaining smooth kitchen operations and supervises the line crew to achieve assigned tasks according to standards.
- Uses Coupa to order food, alcohol, and wine, and works directly with vendor representatives as needed.
- Understands and utilizes the TOCK reservation system to support guest service.
- Prepares and cooks food to order on a daily basis while maintaining quality standards.
- Works with guests who have food allergies or special requests for events and special occasions.
- Assists with monthly inventory and helps control labor and food costs.
- Follows fire, safety, and health procedures, and assists in emergency and security situations as directed by management.
- Reports mechanical or maintenance issues promptly to the engineering department.
- Maintains safe and clean work conditions for all staff.
- Serves as a role model for the team, leading by example.
- Ensures food quality and maintains a 100% guest satisfaction rate.
- In charge of the setup and breakdown of the Back Ranch kitchen and serving operations for each dinner service or scenic ride.
- Holds a valid driver’s license and is comfortable driving in snowy and wintery conditions.
Job Requirements:
- High school diploma or equivalent required.
- 3–5 years of leadership experience in a culinary environment.
- Strong ability to communicate effectively in English, both verbally and in writing.
- Comfortable working in a western environment alongside wranglers and occasionally assisting with horse operations or duties.
- Culinary degree or certification preferred.
- Current certification in the state Professional Food Handler Program preferred.
- Experience with Guest Connect or other Vail Resorts Programs preferred
The expected pay range is $22.00/hr - $26.03/hr. This is the pay range we reasonably expect to pay for this position. Individual compensation decisions are based on a variety of factors.
