Job Summary:

We are truly passionate about our people and we want a person who can deliver exceptional guest service by hiring, developing and leading a great team. The position will report to the F&B Director and have complete restaurant and culinary oversite ensuring operations are run safely, efficiently and cost effectively while exceeding customer service expectations at this high volume location.

 

Job Responsibilities:

  • All-inclusive daily operational and financial oversight of Great Room Grill and Spruce Camp Bar F&B service during winter months.
  • Oversee the winter lunch program for Children’s Ski School.
  • Complete culinary oversight of both winter and summer banquets/events happening at Spruce Camp and Cliff House and any other Stowe venues (Canteen/Midway, etc).
  • Manages Spruce Camp the restaurant at all times to assure high quality of service and product following guidelines in the Vail Resorts, F&B Operational Playbook.
  • Coordinates efforts of all food & beverage employees; assures adequate staffing and supervision.
  • Assures completion of necessary paperwork as needed on a daily basis. POS Reconciliation, Facility Check List, Safety Meetings, Safari Topics and Avero Log Books.
  • Maintain current Health and Liquor permits.
  • Constantly lead the search for innovation and change, and implements these changes to exceed our guests’ expectations and company goals.
  • Maximize profitability and be fluent in labor and cost of sales reporting/management.
  • Overall restaurant & location cleanliness.
  • Inspect quality of food product received at Spruce Camp.
  • Maintains adequate inventory levels of all products according to business levels.
  • Ability to attend work in harsh weather environment.
  • Ability to hold staff accountable to Vail Resorts, Inc. policies, procedures and performance standards.
  • Maintain a Safe environment and keeps location compliant with all Health and Safety requirements
  • Manage operation to all Covid-19 related safety SOPS including but not limited to Mask & Vaccine Requirements, Safe Food Service and above all employee & guest safety in all areas of operation. 
  • We are a company that works together; and throughout the season you may be required to assist other restaurants as needed.

 

Job Qualifications:

  • Must provide proof of Full Vaccination status with approved vaccinations. 
  • 3-5 years Management/ Culinary experience in a high volume Food and Beverage environment including daily retail F&B and private events.
  • Intermediate or better computer skills; working knowledge of Word/Excel/Outlook.
  • Exceptional communication skills, guest service and team building abilities.
  • Must have leadership, problem solving and multi-tasking experience.
  • Must be fluent in English.
  • Valid Serve Safe Manager Certification Required
  • Valid driver’s licenses required.
  • DLC Certification Required
  • Must be available holidays & weekends during peak months. Some schedule flexibility can be enjoyed during off season months.
