Job Summary: 

The Food and Beverage (F&B) Organization is comprised of over 300 different restaurants that share a commitment to bringing excellence to mountain dining as part of the overall ski experience. We believe that F&B leaders should possess a strong working knowledge of the front and back of house supported by best-in-class central programs, training and support. As such, our in-resort Senior Manager level F&B leaders are responsible for the management and leadership of multiple high-volume operations. Additionally, multi-unit managers lead one of three disciplines –culinary, beverage or events – for the resort, participating in enterprise groups and projects. The Senior Manager is responsible for executional excellence in both guest and employee experience.

 

Job Responsibilities:

  • Management over multiple food and beverage outlets as well as a strong ability to develop relationships with key business partners and other functional groups.
  • Builds and develops a talented team that is aligned with resort goals and culture and can deliver to established operational standards.
  • Provides next level leadership and development for managers throughout the division.
  • Empower, develop, appraise, and create the best atmosphere for employees to be and do their best in.
  • Ensure that operation fully supports initiatives with corporate strategic partners by giving outstanding representation to their product.
  • Work with COE and represent resort in Culinary council to roll out culinary guidance for QSR, FSR and Banquet operations.
  • Super user for all systems related to the Food & Beverage team including Delphi, IG billing, procurement systems, health & safety and HR systems.
  • Responsible for Payroll exceptions, approvals, and labor distribution reports across a number of outlets.
  • Accurately conduct and review daily reports and safety audits.
  • Know and enforce local, state and federal regulations for the sale and distribution of alcohol.
  • Ensure compliance with local, state and federal Health department mandates.
  • In conjunction with restaurant leadership team investigate and resolve guest complaints.
  • Ordering, working with maintenance dept. on projects and priories, floor supervision during peak times, coordination with other departments to ensure a smooth operation.
  • Oversee ordering/receiving, cost transfers, variance reports and inventory control for all food, beverages, supplies, etc.
  • Responsible for supporting day-to-day operations for our outlets in the absence of General Management.
  • Leads and manages capital project requests and the completion of such requests across multiple levels of the business.

 

Job Requirements:

  • High School Diploma or equivalent
  • Minimum 7 years restaurant experience
  • Minimum 5 years management experience
  • Ability to manage a budget of up to $2m
  • Alcohol service certification required within 30 days of employment
  • Serve Safe Food Protection Manager Certification required within 30 days of employment

 

Preferred:

  • Bachelor's degree in Hospitality or Culinary
  • Familiarity with commercial kitchen equipment and operations
  • Experience with Coupa purchasing software
  • Ability to Ski or Ride beginner & intermediate terrain
