Job Summary:

We’re looking for a skilled and motivated Culinary Assistant General Manager to oversee the kitchen operations at Wall Bar, Kirkwood’s premier lunch-only, full-service restaurant. This role works closely with the General Manager to lead back-of-house staff, ensure high-quality food preparation, and maintain smooth, efficient lunch service during the winter season. Ideal for someone who thrives in fast-paced environments, enjoys mentoring culinary teams, and brings a hands-on leadership style to every shift.

Wall Bar is located in the heart of The Village at Kirkwood Mountain Resort. Open during the winter season, this 130-seat restaurant serves upscale pub fare and a full bar, offering skiers a lively and elevated dining experience just steps from the lifts.

Job Responsibilities:

Culinary Operations & Quality Control

  • Oversee daily kitchen operations to ensure consistent, high-quality food production and presentation.
  • Work with the General Manager to develop and execute menu items in alignment with Wall Bar’s culinary standards.
  • Ensure food is prepared and served in a timely manner during high-volume lunch service.
  • Monitor portion control, food safety, and quality assurance practices.

Team Leadership & Training

  • Lead BOH staff in daily opening, shift, and closing procedures.
  • Train and mentor kitchen team members on recipes, station setup, cooking techniques, and safety protocols.
  • Provide in-the-moment coaching and assist with performance feedback as directed by the General Manager.
  • Foster a positive, collaborative, and efficient work environment.

Inventory & Cost Management

  • Assist with ordering, receiving, and storing food and kitchen supplies.
  • Monitor inventory levels and minimize waste through proper rotation and portion control.
  • Support food cost tracking and budget goals.

Compliance & Safety

  • Ensure all BOH staff adhere to resort, health, and safety regulations.
  • Maintain cleanliness, organization, and sanitation across all kitchen areas.
  • Report maintenance or safety concerns promptly to the General Manager.

Sustainability & Operational Support

  • Support the implementation of Commitment to Zero sustainability and recycling initiatives, in coordination with the Resort Sustainability Manager.
  • Train staff on sustainability practices and provide ongoing feedback.
  • Participate in waste sorting and diversion programs, ensuring compliance with resort sustainability standards.
  • Conduct regular assessments of outlet waste systems to improve diversion rates.

 

Job Requirements:

  • 1–2 years of supervisory or lead experience in a culinary or hospitality setting.
  • Strong leadership and communication skills.
  • Knowledge of kitchen operations, inventory control, and food safety standards.
  • Must be able to work extended hours during peak periods, including weekends and holidays.
  • Ability to stand for long periods, work in a high-heat environment, and lift up to 50lbs.
  • Serve Safe Manager Certification (or ability to obtain within 30 days of hire).
  • Passion for delivering high-quality, flavorful dishes in a fast-paced environment.
  • Positive, team-oriented mindset with strong attention to detail.
  • Comfortable working in a high-pressure, high-volume resort setting.
  • Enjoys mountain culture, outdoor recreation, and seasonal operations.

 

The expected pay range is Starting at $25.00/hr. This is the pay range we reasonably expect to pay for this position. Individual compensation decisions are based on a variety of factors.
