Job Specifications:
The Sommelier is responsible for developing, sourcing and organizing a wine list and beverage program that is on brand with the Ski Tip Lodge dinner and event service programming and aligns with and supports the company core beverage program. With a high level of knowledge, the sommelier is responsible for recommending wine selections to our guests, supervising/ executing wine service, regularly educating associates, collaborating with beverage vendors in an effort to create the most compelling wine list to drive increased wine sales and profitability while staying within established overall inventory values.
Essential Duties and Responsibilities:
Work the dining room floor, engaging with the guests and making wine recommendations, pairings and sales.
Support the overall front of house nightly dinner service
Hold bi-monthly wine educational classes along with techniques to match wine and food to support the beverage program. Assisting the servers to understand the right pairings.
Provide mentoring, coaching, and regular feedback to improve associate performance and restaurant profitability.
Collaborate with dining room manager, executive chef and general manager to procure a wine list that shows variety and diversity, but also one that matches the price category of the attending demographic and matches the style of food being served.
Work with vendors to support the restaurant and bar programs with promotional events including wine dinners.
Maintain an accurate list. Update the wine list based on sales, vintage changes and inventory.
Establish, monitor and report out on beverage product losses and wastage
Drive sales, reduce beverage cost, drive profit margins through savvy purchase recommendations and product positioning
Advise guests on wines based on their personal tastes and food choices
Ensure wines are served at the right temperature and within the proper glassware
Assist in the management of the wine cellar including storage, vintage, stock rotation and monthly inventory.
Participates in the marketing of food and beverage programs and promotions for the restaurant and bar up to and including representing the outlet and participating in food and wine events off site as determined by the general manager.
At times, the sommelier may be asked to support other signature dining outlets within the resort portfolio with wine program guidance and staff education.
Other wine and alcohol programming duties as assigned.
The expected pay range is $20.00 - $22.76. This is the pay range we reasonably expect to pay for this position. Individual compensation decisions are based on a variety of factors.
