Summary of Job: The purpose of this position is ensure guests have a great experience through the proper cooking and safe food handling procedures. Banquet Cooks are responsible for positive guest interactions while accurately preparing plates and platter presentations for banquets, setting up and operating action stations for banquets or buffets and stocking of all items. At all times, cooks are expected to be attentive to guests needs and making them feel welcome, comfortable, important and relaxed.

 

Essential Job Responsibilities:

  • Assist Chef with preparation and execution of wedding and banquet events.
  • Inspect and clean food preparation areas, such as equipment and work surfaces, or serving areas to ensure safe and sanitary food-handling practices.
  • Ensure freshness of food and ingredients by checking for quality, keeping track of old and new items, and rotating stock.
  • Portion, arrange, and garnish food, and serve food to servers or patrons.
  • Observe and test foods to determine if they have been cooked to appropriate health and food safety standards, using thermometers when required
  • Season and cook food according to recipes and chef instruction.
  • Ensure food is stored and cooked at correct temperature by regulating temperature of ovens, broilers, grills, and roasters.
  • Bake, roast, broil, and steam meats, fish, vegetables, and other foods.
  • Weigh, measure, and mix ingredients according to recipes and chef instruction, using various kitchen utensils and equipment.
  • Wash, peel, cut, and seed fruits and vegetables to prepare them for consumption.
  • Carve and trim meats such as beef, veal, ham, pork, and lamb for hot or cold service, or for sandwiches.
  • Prepare relishes and hors d'oeuvres. 
  • Bake breads, rolls, cakes, and pastries.
  • Following proper plate presentation and garnish set up for all dishes.
  • Track and report any food waste.
  • Handle, store and rotate all the products properly.
  • Prepare dishes for guests with food allergies or intolerances.
  • Clean and maintain all kitchens and equipment.
  • Properly cover and store all food product. Label and date all product for safe storage.
  • Plate food as needed.
  • Adhere to all policies, rules, and regulations of Vail Resorts and Afton Alps.
  • Develop, adhere to, and role model the company’s mission, vision, and values.
  • Assist cleaning of banquet and wedding equiptment when needed.
  • Other duties as assigned.

 

 

Job Requirements:

  • Must be 18 years of age or older
  • High school diploma or equivalent - Preferred  
  • High level of interpersonal skills to ensure: teamwork, high level guest contact, and commitment to guest service.
  • Certified Slip Resistant shoes are required prior to starting work. Shoes must be provided by the employee.
  • Must demonstrate ability to receive direction and act upon it. - Preferred
  • Flexible schedule required during weekend times throughout the summer. – Required
