Whistler Blackcomb is offering apprenticeship positions that will complete Professional Cook 1, 2, & 3 through distance education learning with Camosun College. Cost of tuition, text books, and course fees are paid for by Whistler Blackcomb. We are looking for motivated applicants with a passion for the Culinary Arts, who want to grow their career with Whistler Blackcomb.


Chef Apprentice Level 1

Course outline

•             Basic Stocks, Soups and Sauces

•             Cutting and cooking of common Vegetables and Fruit

•             Cooking of basic Potato, Rice and Pasta Dishes

•             Cooking of Basic Meat, Poultry and Seafood dishes

•             Preparation of basic Salads, Dressings, Vinaigrettes

•             Production of Sandwiches and Panini’s

•             Cooking of Egg dishes and Breakfast items

•             Trimming of meats and Poultry

•             Comprehensive Knife skills

•             Preparation and baking of basic pies and tarts and cookies

•             Preparation of basic fruit desserts and Custards

•             Producing and baking of basic yeast based breads

•             Brewing of Coffee and Tea

•             Learn basic terminology and Nutrition

•             Following and adjusting recipes

•             Receiving and storage procedures


What you’ll be doing:

•             Adhere to the grooming policy.

•             Report to work on time in a clean Uniform.

•             To understand and comply with Whistler Blackcomb’s HACCP, Food Safe and COR safety programs.

•             Knowledge on how to safely turn all equipment on and off before and after service.

•             Knowledge on how to operate all necessary equipment in the station.

•             Adhere to all Food Safe handling procedures, no eating in the kitchen, wearing of gloves etc.

•             Comprehensive knife skills, basic knowledge of hot cooking techniques and food preparation.

•             Engage in more complex high volume food preparation of fried, baked, hot and cold menu items for all food outlets.

•             Lead the station team in the absence of the Station cook.

•             Lead & participate in the stocking of all stations in a timely manner this includes food product, plates, small wares and necessary equipment needed for service.

•             During high volume times communicate product volumes to the lead/station cook.

•             Product knowledge in all station to be able to point our guests in the right direction.

•             Adhere to the portion, quality and freshness guidelines in all dishes.

•             Adhere to the temperature and presentation guidelines of all dishes.

•             Knowledgeable on dietary options, ingredients and station guide manuals.

•             Perform in a fast paced guest facing, multi-cultural environment.

•             Provide world class service to all of our guests, assist our guests in commonly asked questions.

•             Lead in our product enhancement and upselling programs, to make the guests experience better.

•             Communicate concerns and difficulties to the lead cook and Sous Chef. Ask for help and assistance in time of need.

•             Assist the restocking of all food products, plates, small wares and equipment during and at the end of the day.

•             Assist the leadership in waste reduction and waste documentation.

•             Knowledge on how to safely clean all equipment in the station.

•             Good organizational skills, product rotation in coolers and freezers, dating and labeling of all products.

•             Assisting in cleaning the stations, follow weekly cleaning outlines.

•             We are a company that works together and throughout the season you may be required to assist other departments as needed.

•       Always show up on time, in uniform, and adhere to the grooming policy!

•             Food Safe Certificate 1 (Course will be offered).

•             Cooking exposure to various kitchen machinery such as grills, fryers and ovens is necessary.

•             1 year kitchen experience in a high-volume kitchen facility is required.

•             Ability to work under pressure.

•             Ability to handle a station.

•             Willingness to learn and take direction.

•             Basic knife skills.

•             Proof of criminal record check.
