Job Duties:
Manage the culinary program for a complex fine dining restaurant. Develop menus and food programs that keep with the character of the restaurant and maintain the financial performance outlined in the budget. Provide recipes, prep sheets and standards to train a staff with diverse skills. Mentor and provide effective feedback, including formal performance evaluations. Manage schedules and tasks to control labor costs. Monitor and adjust Cost of Sales Food, set ingredient specifications and purchase food products. Maintain effective working relationships with other departments and provides positive leadership for execution of menu by service staff. Work well with others and handle problems with a fact-based and analytical approach. Take responsibility for the working condition of the kitchen, including cleanliness and safety. Maintain a working environment that is positive and productive, using skills outlined in the many Vail Resorts management development training classes.
Job Requirements:
This position requires a skilled culinarian with training and experience equivalent to a degree in Culinary Arts and at least two years as an Executive Chef for a fine dining restaurant. Other management experience as Sous Chef or Executive Sous Chef is highly preferred and a demonstrated ability to develop innovative culinary programs is critical. Hotel or resort experience is preferred and club experience with membership is helpful. Some knowledge of Spanish is helpful and computer skills are necessary. A certified sanitation certificate is required. Must obtain or have a valid Colorado driver’s license upon employment.
The expected pay range is $59,100 - $75,000 + annual bonus. This is the pay range we reasonably expect to pay for this position. Individual compensation decisions are based on a variety of factors.
