Job Summary:
Responsible for the food and beverage operation of the Blue Heron or Jenny Dining Room. Responsible for the Beverage Program of Jackson Lake Lodge or Jenny Lake Lodge. Also responsible for assisting in the financial success of the Blue Heron or Jenny Dining Room and the Beverage Program. Responsible for proper training and management of the staff in accordance with the training manual, brand standards and our Health, Safety and Environmental Policies. Responsible for creating a positive and productive work environment through team building and providing support as needed. You are expected to adhere to the company’s mission, vision and value statements. Be knowledgeable of the company’s management systems, policies and initiatives for Hospitality, Environmental, and Health and Safety. You have specific responsibilities within these areas and are expected to understand them

Job Responsibilities:

- Ensure all company policies, procedures, service standards and assigned duties are performed correctly and efficiently.
- Maintain a positive and professional rapport with all staff and guests.
- Responsible for managing and attaining revenue goals for daily F&B and event operations.
- Responsible for purchasing and controlling all beverage inventory of the locations.
- Responsible for monitoring and recording all beverage transfers to Jackson Lake Lodge locations.
- Responsible for processing invoices for alcoholic beverages for Jackson Lake Lodge locations.
- Responsible for purchasing and managing all supplies necessary.
- Responsible for adherence to NPS and Brand Standards, conduct regular audits to ensure compliance.
- Become knowledgeable of all Food and Beverage items available.
- Become knowledgeable of general information on GTLC operations and National Park.
- Conduct initial and ongoing training of all service staff ensuring that all company policies, procedures, service standards, P.O.S. operations and assigned duties are performed correctly and efficiently.
- Responsible for scheduling staff as business levels dictate. Also ensure that staff schedules are within budgeted labor guidelines and that labor cost percentage is at or below budget.
- Work with Assistant Managers on daily Pre-Shift meetings with the staff to review specials, concerns of the day and any other information important to the F&B Department.
- Work closely with the Lead Bartender to develop recipes and inventory pars for all Jackson Lake Lodge locations.
- Work closely with the Sales and Events team to review all tour groups, convention group and private group reservations.
- Ensure prompt accurate service anticipating guests’ needs.
- Talk to all guests and handle their complaints.
- Be hands on. Assist directly with food and beverage service as necessary.
- Ensure cash drop and receipts audit pack according to training standards at the end of the shift.
- Work closely with the Culinary Team and communicate all menu concerns, service timing and special requests.
- Responsible for maintaining payroll daily, including tip and group service charge distribution and submitting it according to assigned deadline.
- Work closely with the Banquet Manager and Sales to ensure the success of all banquet events and fulfillment of special requests.
- Work closely with Restaurant Managers and communicate all changes, beverage concerns, opening/closing of the bars and wine service.
- Work closely with Restaurant Managers to prepare, conduct and implement Beverage training for Jackson Lake Lodge locations.
- Attend BEO, Departmental and Manager Meetings as assigned.
- Develop and implement the opening and closing procedures.
- Develop and implement staff sales incentives to encourage up-selling to maximize revenues
- Responsible for the cleanliness of the restaurant maintaining a clean and organized work area.
- Responsible for maintaining all restaurant equipment in operational order and report all concerns to the Maintenance or IT Dept.
- Responsible for managing guest reviews by replying to Medallia reviews and implementing corrective measures
- Maintain a professional, well-groomed appearance and pleasant demeanor.
- Promote a positive work environment.
- Handle employee issues as they arise (coaching, discipline, training, scheduling, payroll, etc.)
- Support Food and Beverage management initiatives.
- Other duties as assigned.

- Previous high-volume restaurant experience
- Training experience
- Fine Dining Restaurant experience (Mural Room)
- Knowledgeable of wine service (Mural Room)
- Supervisory Experience: Required
- TIPs Certified

- Able to work long hours and varied shifts
- Must be 21 or older to serve alcohol
