Restaurant Managers are visionary leaders responsible for restaurant operations, maintaining operational goals, promoting teamwork amongst staff, and elevating service quality and safety to ensure an exceptional dining experience for our guests.

 

Remarks given: Job Summary: Join our Mountain Dining team as a General Manager, responsible for general oversight of your location. This position will ensure all Mountain Dining standards are upheld while providing an extraordinary dining experience on a daily basis for the Kirkwood resort guest. The General Manager position is responsible for the day-to-day operations and management of the restaurant.

Location Description: Cornice Pizza is our retro themed Pizzeria offering a multitude of food and entertainment to resort guests. Come dine at our family friendly sports bar that offers games for kids and a full bar experience for adults.

 

Job Responsibilities

Oversees the restaurant at all times to ensure high-quality guest service and experience; maintains a high standard for overall lodge/restaurant appearance and cleanliness.
Pro-actively manages location’s financial performance through monitoring of financial reporting, participation in annual budget review process and monthly financial reviews. Responsible for driving contribution margin through appropriate management of labor, operating and cost of goods expense.
Collaborate with the Culinary AGM to ensure proper inventory counts, ordering, and menu design/redesign.
Consistently completes and/or oversees operational audits to ensure location is operating to standards.
Responsible for completion of necessary daily financial paperwork and location opening/closing including accurate cash handling procedures.
Responsible for collaborating with location leadership team to schedule with considerations to business volume and labor budgets. Accurate management of employee time and labor.
Coaching and monitoring FOH and BOH staff to uphold company and resort standards.
Follow all Environmental Health guidelines, Serve Safe best practices and Vail Resorts safety standards.
Maintains adequate inventory levels of all products according to business levels through accurate ordering and participates in monthly inventory counts.
Maintain consistent and meaningful communication with staff through meetings, emails and 1 on 1 conversations.
Involvement with various internal departments and committees as deemed appropriate by manager and supervisor.
Flexibility to assist in other Mountain Dining operations if/when needed.
Ability to attend work in winter weather environment.

 

Job Requirements

3 years previous food and beverage management experience
Serve Safe Manager Certification (or ability to obtain within first 30 days of hire)
Tips certification, RBS certification, and Food Handler certification within 30 days of hire.
Intermediate computer skills; Microsoft Office Suite, POS software, Ordering software, T&L software
Excellent communication and guest service skills.

 

Other job duties of this position include, but are not limited to:

Candidate is responsible for ongoing training of company Brand Standards. 
Responsible for the guest satisfaction, upholding standards, and financial performance of the food and beverage operation.
Responsible for scheduling, hiring, discipline of all food and beverage staff.
Operate facilities at proper staffing levels for all seasons.
Responsible for timely Payroll exceptions, approvals, and approval of all labor distribution reports.
Ordering and inventory control of restaurant food and beverage as applicable.
Make sure facilities and employees have necessary tools and equipment to effectively do their jobs.
Ensure that operation fully supports initiatives with corporate strategic partners by giving outstanding representation to their product.
Financial Responsibility: develop, implement, and manage controls for Labor, Cost of Sales, and operational expenses to attain budgeted and forecasted figures while maintaining quality standards.  Participate in forecasting and budgeting.  Review, analyze, and explain variances in Profit & Loss statements.  Perform billing and payroll, in a timely & accurate manner, including calculation of gratuity distribution. Routinely check product sales mix and work with the culinary team to create unique offerings within our budgeted COS targets.
Human Resource Responsibility: hire, train, develop, appraise, and discipline staff following company procedures.  Post any jobs using requisitions.  Hold monthly staff meetings and training for the proper techniques and etiquette. Monitor staff performance through coaching, counseling, and progressive discipline.  Define performance standards and continually work to provide an experience of a lifetime for our staff and guests.
Product Management: effectively inventory, purchase, and manage all necessary resources to maintain and/or improve quality standards. 
Hold staff accountable to Company standards including TIPS alcohol procedures, CA food handler’s certifications and all internal training requirements. 
Leadership Responsibility: Lead by example.  Participative management style with hands-on work ethic.  Form cohesive team encompassing all staff members.  Daily supervision of all staff members.  Verbally communicate, in a calm, positive demeanor, during the course of all functions with the kitchen, service, beverage, conventions services, and engineering staffs, as well as the guest.
Snow removal/snow blower training is a requirement for winter months. Snow removal maintenance of your facility must be executed daily especially during storm cycles.

The expected pay range is $64,480 - $74,315 + annual bonus. This is the pay range we reasonably expect to pay for this position. Individual compensation decisions are based on a variety of factors.
