Job Summary: 

This person is responsible for providing the experience of a lifetime in all facets of their work. They are responsible for managing the daily back of house operations of the facility. They will be reporting to the Alpine Fine Dining General Manager and will oversee up to 15 employees. 


Our fine dining restaurant Christine’s is located at the top of Blackcomb Mountains. Christine’s is open 6 months during the winter and 2 months during the summer, and is a food primary licensed establishment for 127 interior seating, open for Lunch 11am-3pm.


Job Responsibilities:

  • Maintain and grow the Christine’s fine dining brand
  • Leading with safety, adheres to all safety SOP’s
  • Enhance financial performance, speed of service and table turn during high volume periods
  • Manage labor costs to achieve financial targets
  • Ordering of all food products
  • Lead the cost of sales culture, portion and inventory controls
  • Grow our safety and food safety culture
  • Takes ownership of Vail Resorts Zero Waste initiatives
  • Strict compliance to Food Safe and HACCP regulations
  • Support employees; understands their role in achieving our business strategy
  • Supports and delivers partner and strategic alliance relationships in Christine’s
  • Develop employees to support the organization’s business strategies
  • Take a lead on culinary talent development, succession planning and performance management
  • Take on new responsibilities in an evolving leadership and business environment
  • Seeks to generate revenue opportunities by creating new, and enhancing current businesses      
  • Knows how to seek out the experience of a lifetime for our employees and guests   
  • Instills pride in the team and encourages members to feel proud about their accomplishments

Job Qualifications:

  • 3 years culinary management experience (Chef/Sous Chef) in a high end restaurant setting
  • 5 years’ experience (Chef de Partie/1st cook) in high end culinary environment
  • Red Seal Chef certificate or equivalent
  • Prior knowledge of variance reporting, sales mix analysis and general office work
  • Previous computer experience with Word and Excel
