Executive Chef of the on-mountain dining outlet the Overlook. The Executive Chef is responsible for the overall quality of food while delivering the experience of a lifetime to our guests and employees on a daily basis. Winter operations include the daytime operation of the bar and food court and may also include banquets and other private functions. Summer operations includes banquets, other private functions and supporting outlets open for the summer. Within Breckenridge Mountain Dining we strive to create a culture of engagement amongst our employees through an atmosphere that promotes learning and development to deliver an exceptional experience.  

 

Additional responsibilities include, but are not limited to:

  • Menu planning, production and delivery
  • Assist in budget process and forecasting of business
  • Food safety across all operations
  • Ensure entire outlet operates under HACCP guidelines and adheres to Serve Safe Culinary Guidelines.
  • Maintain financial performance of the operation related to food sales vs labor and spending.
  • Financial oversight including monthly food inventories, cost transfers, menu costing, capital projects, managing operational purchases and participating in monthly business reviews.
  • Accurately schedule and review staff to budgeted labor. Responsible for Payroll exceptions and approvals.
  • Oversee ordering, cost transfers, variance reports and inventory control of all food, beverages, supplies, etc purchased for the entire building.
  • Check and maintain food quality of all food served and produced
  • Responsible for hiring, retaining and training all food service personnel
  • Oversee organization and cleanliness of kitchen operations and BOH storage areas.
  • Adhering and training  all culinary staff to food safety guidelines.
  • Creating and implementing quality and standard controls.

 

Qualifications:

  • Culinary degree preferred
  • Minimum 5 years in high volume restaurant operation
  • Minimum 5 years of direct management experience
  • Serve Safe Food Protection Manager certification
  • Ability to communicate in Spanish preferred, English required
  • Intermediate or better computer skills; working knowledge of Word/Excel/Outlook, previous experience with purchasing systems and Time and Labor
  • Excellent communication skills; you will need to coordinate all kinds of people and ensure they are properly trained
  • Excellent guest service skills; we want to make our guests happy and we need you to lead the way!
  • CO Drivers License preferred, satisfactory driving record required
